A bit after starting to play, I can no longer skip or control from iTunes on my phone. I have to open the Home app to control the playback. This is with hand off to Homepod disabled. This is one issue I've not wasted time troubleshooting but thought I'd mention it. If your speaker or display is within 15 ft - 20 ft (4.5 m - 6 m) of the router, and music is still choppy when you play from your speaker or display, try one of the steps below. If music is still choppy or stutters, move to the next step.
You can also increase the volume by use of the top touch panel. All you need to do is swipe your finger in a circular clockwise direction to turn the volume up as shown below. Step 2. Reboot router
I've reset the homepod multiple times, restarted router, computer, etc. I've even flashed the bios on the off chance that something weird was going on there. Have them for a few months now and suddenly, they just randomly pause. I have Apple Airport AC, have plenty of bandwidth and number of device is 15, far below the 50 max for the AC.

Same thing here with Google Nest Mini and Spotify music service. After two or three songs it stops playing and resumes after couple of seconds, maybe a minute. Tried factory reset couple times, different accounts, wifi settings, router reset, etc. Because of this issue I started evaluating Youtube Music and it seems to work fine, didn't have an issue after several days of testing. Thinking to fully switch from Spotify to YT Music. Not quite what I expected from Spotify.
I set the google home mini to factory default and now the problem has solved. I really didnt know that the reset button was there. If you couldn't find any answers in the previous step then we need to post your question in the community and wait for someone to respond. Many of the owners have tried to reboot the speaker, but the problem keeps popping up. Best advice is to contact them and go through the motions so they can gather data on this issue. Reconnect power cable back into the speaker or display. However, it will at least solve this particular issue and any other issues regarding software bugs. In this case, from the settings, you can find that very routine with the random music playing.
Google Home can sometimes play music randomly due to a software bug or set routine. Your Google Home device unexpectedly plays music for two reasons. It will go through stretches where it auto pauses every like 5 seconds, as soon as i unpause and set phone down it pauses again. Then it will be fine for a few songs then states pausing again. The Google Home device could be playing music randomly due to a software bug.
Music played OK for the first 10 minutes, then started lagging again. However I've had my device in the same place for well over a year now and it's only become an issue recently. It's within 5 feet of my router too, running on gigabit internet. It could also be location where you placed the devices?

I noticed that the HomePod works perfectly when placed anywhere else in the room or house but that table. The odd thing is, it used to work perfectly fine until recently. I thought maybe the cable used by the company is one of those cheap unshielded types. So I removed the cable and lo and behold, the HomePod started to work normally again. I put the cable back and boom the issue started again. I suspect the HomePod is very susceptible to RF interference.
The HomePod is placed in a table with shelves. The TV being on top and the HomePod below it. A few weeks back the cable company added a box so that the TV can get basic cable and not just Apple TV hookup.
Ongoing Issues
It may not display this or other websites correctly. Tap Add commands and enter the trigger phrase you want to use (for example, "Play chick chick chick") then tap Save in the upper right corner. Chvrches ("churches") is a synth-pop band from Scotland, but Google Home might play you church music if you don't say the exact right thing. Open your Google Home app, then tap your personal icon in the upper right.
